HISTORY: White Wines Burgundy’s limestone soils produce Chardonnay wines with a wonderful freshness and minerality. From Meursault to Puligny, Maison Vincent Girardin seeks out these limestone soils and strives to respect the characteristics of each magnificent terroir. The white wines’ quality stems from their f inesse and superb aromatic purity, from a balance of richness and smoothness with freshness and liveliness.
Red Wines Maison Vincent Girardin strives to make wines that offer the best possible representation of Burgundy’s terroir. Pinot Noir is by nature a refined, noble grape, and the objective is to respect this character as much as possible and therefore not too over-extract, so that all the splendor of Burgundy can be expressed in these great terroirs. The resulting wines are fruity and elegant, with supple tannins.
VINEYARDS & WINEMAKING The vines are located in the regional appellation area of the commune of Chassagne-Montrachet. Right next to the 1er cru appellation “Les Chaumées”. Soils: light clayey marls, with a south-east orientation. Pruning is carried out in Guyot with various green works (disbudding, trellising, topping).
Manual harvest, sorting on vine then on a sorting table (depending on certain years, use of an optical sorter) and then at the winery.
The grapes after a light crushing and destemming are put whole in stainless steel tanks. A small part of the whole harvest can be incorporated depending on the state of the raw material. After a cold maceration of a few days, the active phase of fermentation takes place with temperature control. During this period, the wine is pumped over and/or punched down. After pneumatic pressing the wines are put into barrels (about 30% new wood) where the maturing process takes place. 16 months for this wine, during which time the malolactic fermentation took place. One month before bottling, the wine from the different barrels is assembled in vats. There is no gluing, just a light lenticular f iltration before bottling. Some modifications on the overall technique can be made depending on the vintage. The bottling is done according to the lunar calendar.
