Santenay, Vieilles Vignes Blanc

HISTORY: THE WINES  White Wines Burgundy’s limestone soils produce Chardonnay wines with a wonderful freshness and minerality. From Meursault to Puligny, Maison Vincent Girardin seeks out these limestone soils and strives to respect the characteristics of each magnificent terroir. The white wines’ quality stems from their f inesse and superb aromatic purity, from a balance of richness and smoothness with freshness and liveliness. 

Red Wines Maison Vincent Girardin strives to make wines that offer the best possible representation of Burgundy’s terroir. Pinot Noir is by nature a refined, noble grape, and the objective is to respect this character as much as possible and therefore not too over-extract, so that all the splendor of Burgundy can be expressed in these great terroirs. The resulting wines are fruity and elegant, with supple tannins.

VINEYARDS & WINEMAKING  The vines are located in the Santenay Village area, in the south of the Côte de Beaune. Mainly from the parcel “Clos de la Comme” located just above the 1er Cru “Beauregard”. Soil : Clay and limestone. The subsoil is composed of different limestone layers (pebbles, marly soils). The slope is strong. The pruning is done in Guyot with different works during the green season. (Disbudding, trellising, topping).

Manual harvest, sorting on vine then in the vat and finally pressing (pneumatic press) to obtain a slow extraction.

Barreling after a slight settling. The grapes are put in French oak barrels of 500 liters (10 % of new barrels) in which the alcoholic and malolactic fermentations in yeasts and native bacteria will take place. Breeding will be long on fine lees for 15 months. Without stirring. One month before bottling, the wine from different barrels is placed in a stainless steel tank for blending. Filling before gluing and light filtration before bottling. Bottling is done according to the lunar calendar.
